I found this quick & easy recipe (my favourite kind) for Lemon & Banana Muffins on recipeyum – contributed by Jacs Veg Head. It’s a great way to use over-ripe bananas or ones you’ve had stashed in the freezer.
The fresh lemon juice gives them a slight lemon flavour (you could add zest for a stronger lemon flavour), and you can add any extras in that you like. I love dates & walnuts so added in some of these for something extra. If you’ve got any last minute visitors coming around for coffee & need to whip up something quickly, these are easy to prepare & only take 12 minutes to bake.
Take the opportunity to set up afternoon tea with a pretty tablecloth & some nice cups & you’ll leave your guests impressed. No guests? Then make some just for you and spoil yourself for a change (just like I did this afternoon). Enjoy!
