It’s been a while since my last post – in between planning (and enjoying) a milestone birthday party, a trip to Bangkok and Hong Kong, and getting back into painting our house before the Summer heat really sets in, the year has got away from me. Now it’s going on to Christmas – the lights and tree are up and I’ve been working on some really easy Christmas decoration ideas which I’ll publish very very soon. In the meantime, I hope you enjoy the following easy peasy recipe.
I’ve been eyeing up all the different flours that can now be found – not only at the health food store but also readily available at the supermarket. I’m not exactly on a health-kick, however I like to try and find an alternative to the normal wheat flours occasionally to enjoy a treat that’s gluten free.
I picked up a packet of coconut flour and made this delicious loaf. It’s a different consistency to a normal fruit loaf – much lighter – but nice for a change.

Give it a go. It’s easy to make and colourful too with the beautiful berry colours showing through.
